For when you want a more "gourmet" option than frozen ones!
Easy Gluten Free Chicken Tenders
1 lb chicken tenders
1/2-1 cup GF breadcrumbs or panko
2 Tbsp nutritional yeast (optional - vegan cheese-y flavor)
1 tsp sea salt
1 tsp black pepper
1/2 cup 1:1 GF flour or almond flour (add more if needed)
2 eggs, lightly whisked
1/3 cup dijon mustard
2 Tbsp honey
Step 1 - Preheat oven to 400 degrees F.
Step 2 - Add your flour to another bowl (bowl 1), set aside. Add your eggs in another bowl (bowl 2) and whisk, set aside. Add your breadcrumbs, nutritional yeast, salt, and pepper to bowl 3, set aside.
Step 3 - Dip your chicken in the flour first, next the egg, and lastly the breadcrumbs. Place on a greased sheet pan. Continue with all pieces of chicken.
Step 4 - Bake for 20 minutes until lightly crispy. Remove from oven, flip over each piece of chicken and lightly spray again with oil. Turn oven from bake to broil. Broil the chicken for 2-3 minutes to get a nice crisp on the outside (watch carefully so they don't burn!).
Step 5 - While chicken is cooking, make your dip. Combine the dijon and honey in a small dish, stir in water for desired consistency or leave as is.
Step 6 - Once chicken as finished broiling, allow to cool slightly and serve with your homemade honey dijon dip.
