LOADED CHOCOLATE BANANA COINS

This recipe is another one from my Instagram archives, and I thought it deserved a new home, here on the blog. I hope you like this recipe as a healthier option to a sweet snack or dessert.



Loaded Chocolate Banana Coins
{Dairy-Free, Gluten-Free)

Ingredients:
1 banana
~2 Tbsp homemade peanut butter, or favorite brand of PB
~1 Tbsp hemp seeds
Sprinkle of cinnamon


How To:

Step 1 - Slice a banana into coins, about 1/2 inch thick. Place on a tray with parchment paper, and freeze for about 20 minutes.
Step 2 - While the banana is freezing, prepare your chocolate. In a double boiler - heat safe bowl over a pot of boiling water - add your chocolate to the bowl and allow the water to come to a boil. The chocolate will start to melt, keep stirring so it doesn't burn.
Step 3 - Once your chocolate is all melted, and the banana has set for 20 minutes in the freezer, take the bananas out. Dip one coin at a time into the chocolate, either half way, or fully. Whichever you prefer.
Step 4 - Top with peanut butter, a sprinkle of hemp seeds and cinnamon - or grab your favorite toppings and dress them up how you want to. Line them back up on the tray as you finish up dipping and topping.
Step 5 - Place back into the freezer until chocolate has hardened. You can store these in a pyrex in your freezer and get out when you want to eat them, I would use them up within a week.
